slow cooker balsamic beef roast

this Slow Cooker Balsamic Beef Roast has officially entered the weekly rotation. It’s rich, cozy, and full of grounding fall flavors!!! the kind of meal that makes your whole house smell amazing while it simmers away all day.🍂

Ingredients:

-3 lb grass-fed chuck roast

-2 tbsp olive oil

-2 onions, sliced

-5 carrots, chopped

-4 garlic cloves, minced

-3–4 medium potatoes, cubed

-½ cup balsamic vinegar

-2 cups beef bone broth

-2 tsp rosemary

-1 tsp thyme

-Salt & pepper, to taste

Directions:

-Heat oil in a skillet and sear roast on all sides until browned. Place in slow cooker.

-Add onions, carrots, potatoes, and garlic around the roast.

-Pour in balsamic vinegar and beef broth. Sprinkle with rosemary, thyme, salt, and pepper.

-Cover and cook on low for 8 hours, until beef is fork-tender and vegetables are cooked through.

-Shred beef and serve with the juices and vegetables.
